Lower Fat Vegetable Stew

Ingredients:
  • 2 tbsp water
  • 1/4 cup chopped onions
  • 1 cup thinly sliced zucchini
  • 1 medium cut into 8 wedges tomatoes
  • 1/2 cup cut into 2 inch strips green bell pepper
  • 1/8 tsp garlic powder
  • 1 1/4 cups thinly sliced yellow squash
  • 1/2 tsp caraway seeds

Per serving: calories 45, fat 0.5g, 9% calories from fat, cholesterol 0mg, protein 1.8g, carbohydrates 10.1g, fiber 3.4g, sodium 19mg. The recommended wines are: Fumé Blanc, Pinot Noir, or Chianti. (Meat Lovers Just add 1 chicken breast chopped).
 
Preparation:
Add first 6 ingredients to a heavy nonstick skillet over medium heat. Cover and cook 4 minutes, or until vegetables are just tender. Add remaining ingredients, reduce heat to low, cover, and cook another 2 minutes.
